Bruschetta Crostini

Bruschetta reminds me of when I was pregnant with my little one, I could not get enough of it! Honestly, who could blame me, it is so fresh and delicious. These little bruschetta crostinis are the perfect appetizer for any event you are hosting. You can even make the bruschetta mixture up ahead of time and store in the fridge, then pull it out when you are ready! I highly recommend adding this to your dinner party rotation!

Ingredients:
1 sourdough baguette 
2 tbsp extra virgin olive oil - separated
2 cups cherry tomatoes
1/4 of a red onion
2 cloves of garlic
A handful of fresh basil
​3 tbsp grated parmesan (optional)

Instructions:
1. Preheat the oven to 350F and line a baking sheet with parchment paper. 
2. Slice the baguette into 1 inch pieces, place them on the baking sheet, and then use 1 tbsp of the olive oil to lightly coat the tops of each piece of bread. Once complete, put the bread in the oven to crisp up - about 5 min.
3. While the bread is crisping, add the tomatoes, red onion, garlic, basil and remaining olive oil to a food processor. Pulse the mixture a few times, being carful not to over mix. You want the consistency to look like the ingredients are diced up small.
​4. Take the baguette out of the oven, and spoon the mixture onto each piece. If you are using parmesan, now would be the time sprinkle it over top the pieces.
5. Put the tray of crostinis back into the oven for another 2 to 5 mins, long enough to melt the parmesan and heat up the dish. 
6. Remove from the oven, serve and enjoy!
