Stuffed Acorn Squash

I love a savoury breakfast, honestly I would choose savoury over sweet everyday of the week. This recipe is one of my favourites because it is filling and delicious, plus it feels a little extra fun! I like to pull out this recipe when I have a bigger group of people because it is easy to throw together and always hits the spot. The key ingredient with this one is for sure the maple sausage, it really just ties everything together. My go to is Strawberry Hill Farms, they honestly just make the absolute best maple sausage without a bunch of added garbage ingredients! This recipe hold up well in the fridge for a few days as well, and is super easy to pop back into the oven to reheat. We love an easy leftover option here!

Ingredients:
3 small acorn squash
1 tbsp extra virgin olive oil - divided
1lb ground  maple sausage (Strawberry Hill Farms is my favourite)
1/2 cup diced red pepper
3 cups chopped kale
1/4 cup red onion
3 tbsp goat feta

Instructions:
1. Preheat your oven to 350F and line a baking sheet with parchment paper. 
2. Cut your squash in half lengthwise, scoop out the seeds and lay each squash face down onto your baking sheet. Rub the skins of all the squash with 1/2 tbsp extra virgin olive oil.  Put in the oven to cook for about 20mins (until the skin is easily pierced with a fork).
3. While the squash is cooking, in a frying pan, cook up your maple sausage until completely cooked and browned all the way through. Set aside in a bowl. 
4. In a frying pan, add in the remaining extra virgin olive oil, kale, onion, and peppers. Cook on medium heat, stirring often, for 5 -10mins until the kale, onions and peppers begin to soften. 
​5. Once the kale, peppers and onions are done, put them in the bowl with the cooked maple sausage stirring to combine together. 
6. Take the cooked squash out of the oven, flip them over and put them into a large baking dish. Fill the centre of each squash with the sausage and veggie mixture. Top each squash with 1/2 tbsp goat cheese and place back into the oven to bake for 5-7 more mins. 
7. Remove from the oven, serve and enjoy!
