Honey Mustard Chicken
Honestly honey mustard is a classic and for good reason, it is so yummy! This chicken is always a crowd pleaser, it is my go to when making chicken for a larger group of people and I am short on time for the actual cooking. I also like to pull this one out for more picky eaters, because it is so delicious and easy for any palate. I find it is best when you can make the marinade ahead of time and let the chicken sit for at least 4 hours in it. I think my favourite thing to do is make this recipe in a larger batch so then I have plenty of leftover. That way I can throw it in a salad or have alongside some roasted veggies throughout the week for lunch.
Ingredients:
3 large chicken breasts
2 tbsp dijon mustard
1 tbsp honey
1 ½ tbsp extra virgin olive oil
½ tsp sea salt
½ tsp garlic powder
Instructions:
1. In a large sized ziploc bag, put in your chicken breasts, dijon mustard, extra virgin olive oil, honey, sea salt and garlic powder. Seal the bag and shake the chicken around until it is coated with the mustard and oil mixture. Set in the fridge to marinate for a minimum of 4hrs.
2. Pre heat your oven to 375F. Pull your chicken out of the fridge and let it sit on the counter while your oven is preheating. Once it hits 375F, place the chicken in 9×12 baking dish along with all the marinate for the bag.
3. Put the chicken in the oven and cook for 25-35min, or until the chicken is cooked all the way through, and no longer pink on the inside.
4. Once the chicken is cooked, remove from the oven, and using tongs remove the chicken from the baking dish. Put the chicken on a cutting board and leave it to set for 2-3 minutes. Slice the chicken, serve and enjoy!
