Burger Bowls
My kiddo loves a burger, and honestly they aren't my favourite, not the traditional kind anyway. I truly think it is a left over effect from first trimester struggles for me (if you know you know). This burger bowl is something that is a win in our family regardless of our varying love for a burger. For me it is a lot lighter on my stomach, but still packed with flavour and equally satisfying. Everyone is happy when it's burger bowl night, and honestly I find these bowls way easier to throw together than a hamburger. Plus they are easy to double up so that you can have leftovers for lunch or another night of the week when you are pressed for time.
Ingredients: Makes 4 bowls
1lb lean ground beef
1 tsp garlic powder
1 tsp onion powder
1/2 tsp pepper
1/2 tsp sea salt
2 dill pickles - diced
1 cup cherry tomatoes sliced
4 cups romaine lettuce chopped
1/4 cup red onion diced
4 tbsp cheese - optional
Sauce Ingredients:
1/4 cup avocado oil based mayo
1 1/2 tsp mustard
1 tbsp no sugar added ketchup
1 tbsp relish
1/2 tsp onion powder
1/2 tsp garlic powder
1/4 tsp paprika powder
1 tsp honey - optional
Instructions:
1. In a frying pan add the beef, garlic powder, onion powder, salt and pepper. Cook on medium heat, breaking the beef up and stirring often, until the ground beef, is browned and cooked all the way through.
2. While the beef is cooking fill 4 bowls with 1 cup lettuce, 1/4 cup sliced cherry tomatoes, 1 tbsp red onion, 1/2 diced dill pickle, 1 tbsp shredded cheese.
3. In a small bowl, mix together the mayo, mustard, ketchup, relish, onion powder, garlic powder, paprika and honey. Set aside.
4. Once the beef has cooked add 1/4 cup to each bowl. Drizzle with your desired amount of sauce, enjoy!
