Cobb Salad
Sometimes you just crave a classic and this salad is indeed a classic. I make my Cobb Salad with goat cheese instead of blue cheese, because well honestly blues cheese isn't for me and my love of goat cheese is never ending. I love how a Cobb Salad is always packed with flavour, crunch and is also so filling! This one has all four things I aim to have on my plate in one salad - Protein (hello chicken, bacon and egg), - Fat (hello avocado and goat cheese), - Fibre (hello veggies and avocado), - Colour (hello lettuce, tomato, red onion). Honestly you can't go wrong with this one, and the dressing for it is absolutely the perfect addition to bring all the flavours together.
Ingredients:
5 pieces of cooked bacon chopped up
1 large cooked chicken breast chopped
2 hard boiled eggs, sliced
7 cups chopped romaine lettuce
1 cup diced cherry tomatoes
1/4 cup diced red onion
1/2 an avocado diced
2 tbsp goat cheese
Dressing Ingredients:
1/2 cup extra virgin olive oil
1/4 cup red wine vinegar
1 tbsp grainy mustard
1/2 tsp garlic powder
Juice of 1 lemon
2 tsp honey
Instructions:
1. In a medium mason jar pour in the olive oil, red wine vinegar, grainy mustard, garlic powder, lemon juice and honey. Secure on a lid and shake well to combine.
2. In a large bowl put in the lettuce, chicken, bacon, eggs, cherry tomatoes, red onion, avocado and goat cheese.
3. Drizzle on some of the dressing over the bowl of salad ingredient, then mix everything together until well combined.
4. Eat and enjoy!
