Broccoli Salad

Broccoli salad is kind of a tradition in my family. It is at every get together, BBQ and every summer event. It is highly requested and quickly devoured. As loved as it is, I thought it could use a makeover (sorry mom!). I did some swaps and made it dairy free, refined sugar free and hydrogenated oil free, the hat trick of "healthy" swaps! I find it to still be super delicious and a less heavy on the stomach then the original version. 

Ingredients:
2 heads of broccoli 
1/2 red onion diced
1/4 cup radishes diced
1/4 cup sliced almonds
1/3 cup shredded old cheddar
1 tbsp hemp hearts
1/3 cup mayo (I prefer Primal kitchen)
2 tbsp apple cider vinegar
1/4 tsp sea salt
​1/2 tsp garlic powder

Instructions:
1. Cut up the broccoli into 1/2 inch pieces, dice the onions and radishes. 
2. In a small mixing bowl whisk together the mayo. apple cider vinegar, sea salt and garlic powder. 
3. In a large mixing bowl add in the broccoli, onion, radish, and almonds, top with the sauce and mix together well. 
4. Let sit in the fridge for 30min before serving. Enjoy!
