Creamy Cashew Cilantro Sauce
I love cilantro and hopefully you also love it and are not part of the population whose genetics make it taste like dish soap, because man are they missing out on some serious yumminess. Something about this sauce feels like summer to me. Maybe it's the brightness, or the freshness of taste, or maybe it's because I love to pour it on a salad and fish tacos. Either way, it's a staple and perfect if you are the only one in your family who love cilantro like me! With this sauce I can have the delicious hit of cilantro without making the rest of the gang not want to eat their meal.
Ingredients:
1 and 1/2 cups packed fresh cilantro
1/3cup cashews - soaked in water for 2hrs - then drained
2 garlic cloves
1/2 tsp sea salt
3 tbsp extra virgin olive oil
1/2 tsp onion powder
1/4 cup freshly squeezed lime juice (about 3 limes)
2 tbsp - 1/4 cup water (how much you use depends on how thick you would like the sauce - if using as a salad dressing make it on the thinner side, if using for a marinade or burger/taco topper make it on the thicker side).
Instructions:
1. In a blender place the cilantro, cashews, garlic cloves, sea salt, lime juice, olive oil, onion powder and 2 tbsp of water.
2. Blend on high until well combined and smooth. If you want the consistency to be thinner now is the time to add some more water and blend again.
3. Transfer over to an airtight container and store in the fridge. It will store well in the fridge for up to 5 days. Enjoy!
