Roasted Radishes

Radishes have a special place in my heart. My dad loved them so anytime I have them, I always think of him. Also, they are honestly the easiest thing to grow in a garden, plus the turn around time from seed to vegetable is so quick it really can make you feel like a full fledge successful farmer! That being said, every year I always plant a ton of radish and because they are so hearty I always end up harvesting a ton too. A thing you should know about me is I hate food waste and because of that I needed to come up with some ways to use all the radish I plant. That’s how this recipe was born, and honestly I love it! It is easy to make and a perfect side dish for any meal, give it a try next time you have a plethora of radish!

Ingredients:

  • 4 cups radishes cut into 1/2 inch cubes

  • 2tsp extra virgin olive oil

  • ½ tbsp dried oregano

  • ½ tsp sea salt

  • 1 tsp garlic powder

Instructions:

  1. Preheat your oven to 375F and line a baking sheet with parchment paper.

  2. In a medium mixing bowl, put in your cut up radishes, olive oil, oregano, garlic powder and salt. Stir the radishes until everything is well combined.

  3. Put the radishes on the baking sheet, then put in the oven and bake for about 30mins, until they are tender and start to crisp up on the sides.

  4. Remove from the oven, serve and enjoy!

*Stores well in fridge for up to 4 days - reheat in the oven before eating again for the best flavour.
