Lemon Coconut Bites
Honestly if lemon is involved you can sign me up! It is my absolutely favourite in every form possible. I will take it in my water, on my salad, in my dessert, in a muffin, on my veggies...you get the picture. The combo in these bites is beyond delicious! The coconut adds the perfect sweetness to the tartness of the lemon and the hint of cashew butter makes them the perfect yummy texture! I love to have these straight out of the freezer, but they are really good anytime. I love to add in a 1/4 cup collagen peptides (collagen powder) for some extra protein to help balance out the bites so they aren't causing a big blood sugar crash for you. They make roughly 25 balls and can be stored in the freezer for up to 3 weeks, making them a great choice to whip up on your meal prep days. Enjoy!
Ingredients:
1 1/2 cups almond flour
3/4 Cup unsweetened shredded coconut
2 tbsp coconut oil melted
2 tbsp lemon zest
1/2 tsp sea salt
2 tbsp cashew butter
2 tbsp lemon juice
1 tsp vanilla extract
1 tbsp honey
1/4 cup collagen peptides (optional)
Instructions:
1. Line a baking sheet with parchment paper.
2. Melt coconut oil in a small saucepan on stove and place to the side to cool a bit.
3. Using a zester, zest your lemon before using it to squeeze our your lemon juice.
4. Put all the ingredients in a large mixing bowl and mix on low until completely combined.
5. Scoop out a spoonful of the mixture and roll into a 1 inch ball with your hand, and place on the lined baking sheet. Continue this step until all the mixture is turned into balls.
6. Place the baking sheet in the freezer for 20mins, to set the bites. Transfer to a silicone storage bag and keep in the freezer. Remove them just prior to eating to allow them to soften a bit. Enjoy!
