Creamy Tomato Soup

Although tomato soup reminds me of fall, we truly have this soup year round. It is hands down my little one's favourite!  It is very easy to make and freezers super well, which makes it a double win in my books! In this particular recipe I like to use the whole vegetable and do not remove the skin or seeds from the tomatoes. A high speed blender or good quality immersion blender are great tools that will help make the texture of this soup extra creamy, just the way we like it! I like to make a double batch when I am cooking this soup, that way I have extra to pack in school lunches or store in the freezer for a future rainy day. I hope you enjoy this one just as much as my little one!

Ingredients:
8-10 cups tomatoes chopped into 3" pieces
1/2 red onion chopped (about 1/2 a cup)
3-4 cloves of garlics
1/2 tsp sea salt
1 tbsp extra virgin olive oil
1/2 to 1 cup bone broth

Instructions:
1. Preheat oven to 350F.
2. Put the chopped tomatoes, onions and garlic into a large baking dish. Drizzle with the olive oil and sprinkle on the sea salt. Stir all together, put in the oven and bake for 40-45mins.
3. Remove from the oven and let cool completely. Once cooled, pour the mixture into your blender and blend on high until completely combined. 
4. a) If you are eating now, you'll want to pour the mixture into a large pot and stir in 1/2 cup  to 1 cup bone broth*. Heat the mixture up to desired temperature. Serve and Enjoy!  
4. b) If you are freezing, pour mixture into a glass jar leaving room at the top for expansion (so it doesn't explode in your freezer)**. Label and put in your freezer for up to 3 months. 

* The more bone broth you add in the thinner the soup will become. I recommend adding in 1/4 cup at a time until you reach the consistency you desire. 

** When freezing I do not add in my bone broth at this step. I like to add it when I pull the soup out of the freezer and am heating it up. I find it saves space in the jars and freezer, and makes it easier for me to judge the consistency of the soup while making it. You can however add it in before freezing if you prefer!
