Spicy Soup To-Go

These spicy soup to go's are so yummy and the perfect lunch for when you are on the run! I have grabbed them and a yeti filled with hot water for days when I have a long drive ahead of me and they are perfect for on the road. They are also great if you are out and about running errands and don't want to buy food out, you can get any coffee shop to fill you a cup of hot water and you are all set! They are basically like the granola bar of soups, convenient, quick, and perfect for on the go. I also find that they are a great way to use up left over chicken and pasta in a way that doesn't feel boring! Give them a try the next time you know you are going to be in a pinch for time at lunch!

Ingredients:
1/2 cup cooked noodles of choice
1/4 cup sliced snap peas
1 tbsp coconut aminos
1 1/2 tbsp fresh chopped basil
3/4 cup diced cooked chicken
1 tsp fresh grated ginger
1/2 a shallot thinly sliced
1/2 a lime
1/4-1/2 tsp crushed red pepper (use a 1/4 if you like just a little heat and 1/2 if you like it extra spicy)

Instruction:
1. In a medium mason jar, layer your ingredients in the following order; noodles, snap peas, coconut aminos, chicken, shallot, ginger, basil,  and top it off with your crushed red pepper and then the lime. 
2. Secure the lid on the jar and store in the fridge or a lunch box with ice pack until you are ready to eat. 
3. Pour hot water over the ingredients filling to the top. squeeze in juice from your lime (I like to also leave the lime wedges in the mixture). Cover and let sit for 5 minutes.
4. Give your jar a few shakes to mix the ingredients together, eat and enjoy!
