Chocolate Peanut Butter Bites
Any other peanut butter and chocolate fans out there? This combination is hands down my husbands most favourite sweet treat, so I though I would make him some for Valentines day! Although I believe in balance and being able to enjoy a treat you love, I also believe that you should be able to pronounce the ingredients in what you are about to eat. I also strongly believe in avoiding oils and sugars that are harmful for you and replacing them with ones that are goods for you and come from natural sources. You can have the best of both worlds, and these chocolate peanut butter hearts are proof. They have all the flavour and deliciousness of the original store bought kind, without any of the toxic ingredients. They are so easy to make and are the perfect treat to have on hand in your freezer or to share on a special occasion! Make a batch this week for your loved ones to show them how much you care about them and their health!
Ingredients:
1/2 cup smooth organic peanut butter
4 tbsp coconut flour**
2 tbsp maple syrup
1/4 tsp pink Himalayan sea salt
1 tsp vanilla extract
1 tsp coconut oil
2/3 Cup Enjoy Life dark morsels
Instructions:
1. Line a baking sheet with parchment paper.
2. In a large mixing bowl combine, peanut butter, maple syrup, vanilla, sea salt, and coconut flour. Mix until evenly combined and then let sit for 5 minutes (this will allow the coconut flour to start absorbing some moisture).
3. Take out a 1 inch ball of dough and press into a small heart shaped cookie cutter, and place on the lined baking sheet.
4. Once all the hearts are made, place them in the freezer for 15-30mins to harden.
5. In a double broiler, melt the coconut butter and the chocolate together.
6. Remove the hearts from the freezer and dip into the melted chocolate, covering completely, and placing back on the baking sheet.
7. Once all the hearts are covered in chocolate, place them back in the freezer for 1-2mins. Removes and drizzle the remainder of the chocolate over the hearts in a zig zag pattern.
8. Place the hearts back in the freezer for 5minutes to completely harden again.
9. Remove from the baking sheet and store in an air tight container in the freezer for up to a month.
**No two packages of coconut flour are the same. They change so much based on temperature, how they are stored, time of year, what music is playing in the background, if your smiling while cooking, etc. That being said, you may find that you need a little more flour in your recipe. Before deciding, make sure to always let your batter sit for a few minutes before adding more. Coconut flour needs a bit to warm up to the other ingredients before it starts to absorb them. It may be a finicky flour, however it really does make this recipe!
