Fudgey Chocolate Popsicles
Okay, as a child, a fudgesicle was hands down my favourite popsicle treat. Turns out as an adult it is really high up on the list too! I love how these have all the creamy chocolaty goodness of a traditional fudgesicle but with less sugar and zero fillers or added junk! I know when you see that there is coconut milk and maple syrup you would think the flavour of both would over power and make them not as yummy, but it just isn’t the case. These have such a great flavour, and feel like the chocolaty goodness of my childhood, but don’t leave me feeling like bloated and lethargic after. One tip is to use a silicone popsicle mould, they are just way easier to remove the popsicles from than a hard plastic one! Also flaky sea salt is so key here, it just brings out the best flavour from the cacao and takes the fudgesicles to the next level!
Ingredients:
½ cup cacao powder
1 cup plain greek yogurt
1 can coconut milk
1 tsp vanilla extract
1/3 cup maple syrup
½ tsp flaky sea salt
Instructions:
1. In a blender put in the greek yogurt, coconut milk, cacao powder, vanilla extract, maple syrup and flaky sea salt. Blend on high until well combined.
2.. Pour the mixture into 12 popsicle moulds. Add in your popsicle sticks and place the moulds in the freezer for a minimum of 8hrs. Once they have hardened eat and enjoy!
