Pistachio Crusted Salmon

I love salmon, a lot, like maybe too much if that is even a thing. Because I love it so much, I have had to get creative and come up with different ways to prepare it so that the rest of my family doesn't get sick of eating it. This pistachio crusted salmon is a big hit in our home, and honestly it is no surprise because it's so good. The best thing about this recipe is that it takes very little time to put together and cook, which makes it perfect for when you want a delicious meal on a weeknight but have limited time to make it happen. If you too love salmon this recipe is a must try!

Ingredients: 
3 fillets of salmon
1/2 cup chopped pistachios
1/4 tsp sea salt
1/8 tsp ground pepper
Juice of 1 lemon - 1/4 cup
1 tbsp extra virgin olive oil
1/2 tsp garlic powder

Instructions:
1. Preheat your oven to 350F and line a baking sheet with parchment paper. 
2. Put your salmon fillets, skin down on the baking sheet, sprinkle with the sea salt and pepper. 
​3. In a small bowl, mix together the lemon juice, olive oil and garlic powder. Pour evenly over the fillets, leaving about 1 tbsp left over. 
4. Sprinkle the chopped pistachios over top of the salmons, drizzle the remains lemon juice, olive oil mixture on top of the pistachios. 
5. Place in the oven and bake for 12-15mins, until the salmon is cooked and still flaky when cut with a fork (you really want to make sure that you do not over cook the salmon or it will be dry and the pistachios will get extra crunchy).
6. Remove from the oven, serve with salad and a veggie side, eat and enjoy!
