Sweet Onion Chicken Bowl

This Sweet Onion chicken bowl is absolute perfection in my opinion. It's got you covered with protein, healthy fats, lots of fibre and colour! (My 4 non-negotiables). The ingredient combinations make it sweet, tangy, hearty and just all over a hit. I like to cook this for supper, and then I always have the leftovers on hand for lunch the next day or two. I have made this one so many times and it never disappoints. My little even loves it (minus the pickled red onions) which is always a win for me! If you have the ingredients prepped ahead of time it is also is easy to whip up in a few minutes for lunch or to even serve a larger group of people. Give it a try, I know you'll love it!

Bowl Ingredients: Serves 6
1 head of kale
1/3 cup walnuts
6 tbsp pickled onions
3 chicken breasts
6 tbsp goat feta
1 1/2 cups cubed sweet potato
1 cup quinoa (dry - it will expand when cooked)
1/2 tsp sea salt
2 tbsp extra virgin olive oil - divided

Sweet Onion Dressing Ingredients:
1/3 cup extra virgin olive oil
2 tbsp dijon mustard
1 tbsp onion powder
1 tbsp apple cider vinegar
1 tbsp maple syrup (if you want it more sweet add in an additional 1 tbsp.)

Instructions:
1. Preheat oven to 350F. Place your cubed sweet potato on a baking sheet, and drizzle with 1tbsp of extra virgin olive oil. In a baking dish, place in your chicken breasts, sprinkle with the sea salt. Put both the chicken breasts and sweet potato in the oven to cook for 25mins. (until chicken is fully cooked and sweet potatoes are soft when pierced with a fork).
2. While sweet potatoes and chicken are baking, cook your quinoa by following the instructions on the package. (My preference is to use a rice cooker!)
3. De -stem  your kale, and cop up in to small pieces, put in a frying pan, drizzle with the remaining extra virgin olive oil. Put the walnuts in with the kale and cook on medium low heat for 5-10mins, until the kale becomes softer. 
4. Once the Chicken breasts are cooked, remove from the oven and cut them into 1 inch cubes. 
5. In a medium sized bowl, put in 1/3 cup quinoa, 1/4 cup sweet potatoes, 1/2 cup of the cooked kale and walnut mixture, 1/2 cup chicken breast. Top the bowl with 1 tbsp goat feta, and 1 tbsp pickled onions and a drizzle of the sweet onion dressing. Enjoy!
