Crunchy Brussel Sprout Salad
If you are looking for a light and refreshing salad, look no further! This salad is super quick to put together and is perfect if you have a larger crowd to feed. I love how crunchy and crisp it is, and I think you will love it too! Using a food processor to shred up the brussel sprouts makes it so much easier! You could always buy a bag of pre shredded ones too if you are in an extra rush to get the salad put together (plus hey, less dishes!)
Ingredients:
6 cups thinly chopped Brussel sprouts
1 small head of radicchio
1/3 small red onion
2 apples
1/2 cup pecans
4 tbsp goat feta - optional
Dressing Ingredients:
1/4 cup extra virgin olive oil
1 tbsp dijon mustard
1/2 tsp sea salt
1 tsp apple cider vinegar
1 tbsp honey
Instructions:
1. In a food processor, chop up your Brussel sprouts into small pieces, the add to a large bowl.
2. Chop up your radicchio, into thin pieces, and place in the large bowl.
3. Dice up the red onion, apples, and pecans and add to your large bowl.
4. In a medium mason jar, mix together the olive oil, dijon mustard, sea salt, apple cider vinegar and honey. Once well combined pour the mixture over top of the ingredients in your large bowl.
5. If you're adding in goat cheese, do so now, and mix together all the ingredients until well combined. Serve and enjoy!
