Walnut Pesto

Once fresh basil starts popping up at the farmers market or if (fingers crossed) I have managed to grown a bunch in my garden, I want to add it to basically everything. One of my favourite ways to enjoy basil is in a simple pesto. It is so good on noddles, chicken, pizza, fish, toast, honestly, the places you can add it are endless. I like the flavour that the walnuts add to this one in comparison to a traditional pine nut pesto. If you have a good food processor this recipe takes less than 5 minutes to prepare. Plus it stores so well in both the fridge and freezer, so it is totally worth making a double or triple batch so you can have some later!

Ingredients:

1 cup (packed) fresh basil

½ cup walnuts

1 clove of garlic

1/3 cup grated parmesan cheese

¼ cup extra virgin olive oil

juice of 1 lemon

½ tsp sea salt

Instructions:

1. In a food processor, put in the basil, walnuts, garlic, parmesan cheese, olive oil, lemon juice and sea salt. Pulse a few times to mix the ingredients together, then turn the food processor on to high for about 2 mins.

2. Once the mixture is well combined, and there are no larger chunks of walnuts, remove from the food processor. Now you can add it to whatever dish you desire, or store in the fridge for up to 2 days. Enjoy!
