Roasted Curry Cauliflower

Pretty much every meal I make has a side of vegetables in some shape or form, which means I like to get creative with different flavours, to keep things from feeling boring. Cauliflower has always been a hard one to serve and have others enjoy. I know that might seem crazy considering cauliflower has this ability to transform to anything from pizza to pasta. Typically for me cauliflower is like the hidden extra, I use it riced to mix in with regular rice for an added boost, or throw it in a soup or a smoothie where it's very much unnoticed. When I decided years ago to find a way to serve cauliflower packed with flavour this recipe was born. It’s delicious and is actually something that I find myself craving! Bonus is that it’s super quick to throw together! That’s always a win for me, something that I can make quickly that tastes delicious and is packed with nutrition.

Ingredients:

  • 1 head of cauliflower (about 4 cups cut up)

  • 1 tbsp extra virgin olive oil

  • 2 tsp curry powder

  • ½ tsp garlic powder

  • 1/8 tsp ground black pepper

Instructions:

  1. Preheat your oven to 350F, and line a baking sheet with parchment paper.

  2. Cut up your cauliflower into smaller 1” pieces.

  3. Place your cauliflower, curry powder, garlic powder, pepper and olive oil in a medium bowl. Toss all the ingredients together until evenly coated.

  4. Put the cauliflower on the baking sheet, and put in the over to bake for 30mins or unto soft when pierced with a fork, and starting to brown on the edges.

  5. Remove from the oven, serve and enjoy! Will store well in the fridge for up to 5 days.
