Chewy Lemon Coconut Bars

I love the combination of lemon and coconut, especially in these chewy granola bars. They are super easy to whip up and school friendly! The first time I made them I thought that my little would not be interested, but turns out she gobbled them right up and asked for more! That makes this recipe a total win in my books. Don't skip the flaky sea salt in this one, it adds the perfect balance of flavour to the granola bars. Give them a whirl, I hope you love them as much as my little!

Ingredients:
​1 cup oats
1/2 tsp flaky sea salt
7 medjool dates 
1/2 cup shredded coconut flakes
1/4 cup hemp hearts
3 tbsp honey
Juice of 1 lemon 
zest of 1 lemon
1/2 tsp vanilla extract
2 tbsp coconut oil

Instructions:
​1. In a food processor put in the dates (make sure they have been pitted), and pulse a few times until they are cut up into small pieces.
2. In a small sauce pot add in the coconut oil, honey, vanilla extract and lemon juice. Heat over medium low heat, and stir until unit the coconut oil is melted and the ingredients are well combined. 
3. Add the oats, hemp seeds, coconut flakes, and lemon zest to the food processor. 
4. Pour the liquid mixture from the sauce pan into the food processor with the other ingredients. Pulse all the ingredients together, until well combined. 
5. Pour the mixture into a 6x6 baking dish lined with parchment paper. Push down the mixture until even in the dish. Sprinkle with the flaky sea salt. 
6. Place the mixture in the freezer to set for 20mins. Remove and cut into granola bar sized pieces and enjoy!

Stores well in the fridge for up to 5 days.
