Peanut Butter Coconut Bars
I just had to do a remake of the very popular coconut PB perfect bars. One because I love them but they are so hard to find where I live and when I do they are very expensive to constantly buy. Second, as much as I love them I don't love that they have so many ingredients in them. I know that the draw for most is all the extra superfoods, but for me the simpler the better. I love to grab one of these when I want a little something sweet, there is just something delicious about the combination of peanut butter and coconut. I also love that these have a higher protein punch than a traditional bar making them the perfect bridge snack to sustain me between meals. An added bonus is they are so simple to make, its really just a dump in the bowl and mix together situation, which means its a great recipe to do when you are in a pinch for time or when you have littles helping out in the kitchen!
Ingredients:
1 1/2 cups almond flour
1/2 cup vanilla protein powder
1/2 cup shredded coconut
1/4 tsp sea salt
3/4 cup peanut butter
1 tsp vanilla extract
1/4 cup raw honey
1 tbsp melted coconut oil
3 tbsp cashew milk (or any milk of choice)
Instructions:
1. Line a 8x8 baking dish with parchment paper.
2.. In a large mixing bowl, put in all all the ingredients, and using an electric mixer, mix together the ingredients until well combined.
3. Pour the mixture into the baking dish, and push down so that the mixture is evenly dispersed throughout the dish.
4. But the bars into the fridge for a minimum of 1 hour to chill.
5. Remove the bars and cut in half lengthwise, then cut into six sections in the opposite direction. (Making granola bar sized shapes - 12 total).
6. Store in the fridge for up to 5 days, eat and enjoy!
