Chia Pudding

If I am being honest the first time I tried chia pudding I was not a fan. It was kind of crunchy and very bland. However, me being be me I had to try and create a version that would satisfy my tastebuds and hunger! It turns out chia pudding is actually delicious (especially if you have enough liquid to actually let the seeds expand so they aren't still crunchy!). This recipe creates the perfect consistency and enough flavour that you could eat it alone or pair it with some toppings. My favourite way to have it is to mash up a few raspberries to place on the top of the pudding. The best thing about chia pudding is how versatile it is plus how easily it transports. I love having a batch in the fridge so I can grab a jar and hit the road, knowing I have a snack that will keep me full and satisfied. Let me know your favourite way to enjoy chia pudding!

Ingredients for one pudding container: 
1/2 cup milk of choice
2 tbsp chia seeds
½ tsp sea salt (optional)
Topping Options:
Homemade Cranberry Sauce
Peanut Butter + a few chocolate chips
Smashed Raspberries
Lemon Zest + Blueberries

Instructions:
1. In a medium mason jar pour in milk of choice, vanilla extract and chia seeds.
2. Whisk together until well combined, and place in the fridge.
3. After and hour or two take the mixture out and give it another good stir, and replace back into fridge for another 4 to 5 hours.
4. Portion out the amount you desire and top with one of the topping options. Enjoy!
