Quick Pickled Red Onion
A dear friend of mine asked if I pickle my own onions, to which I replied, "kind of". I am not currently at the phase of life where I have the time to preserve all my vegetable garden abundance (although I aspire to be there soon!). I also am lacking the pantry space to have the rows on rows of preserves of my dreams. That being said, I do love some pickled onions! They are perfect addition to bowls, tacos, salads, sandwiches and so much more. I like this recipe because it is lower in sugar and they come out delicious every time! Give it a try and elevate your next meal with these little treasures.
Ingredients:
1 large red onion
1/2 cup water
1/4 cup apple cider vinegar
1/4 cup white vinegar
1 tbsp maple syrup
2 tsp sea salt
Instructions:
1. Thinly slice your red onion and place into a clean mason jar. You will want about 1 1/4 cups worth of onion.
2. In a small sauce pan mix together the water, apple cider vinegar, white vinegar, maple syrup and sea salt.
3. Stir the liquid over medium heat until well combined (1-2mins).
4. Pour the liquid overtop of the onions, making sure they are all covered with the mixture. Cover the mason jar, and set aside for 2hrs minimum before use. (the longer it sits the softer the onions will become).
5. Store in the fridge for up to 5 days. Enjoy!
